Breakfast Casserole


This is a great weekend breakfast! I love a hot breakfast on the weekends and this is my family's favorite!

Needed to make

*6 eggs *1/2 cup of shredded cheese *1/2 can of sliced olives (optional) *1/2 can of sliced mushrooms or fresh (optional) *1/2 a small bag of cooked tater tots *1/2 a chopped onion (optional) *6 to 8 oz of cooked breakfast sausage *salt and pepper to taste

*You can also use green onion or bell pepper

Step 1: Precook your tots and sausage. Step 2: Using a skillet, cook all your vegetables for 1 to 2 minutes, or until onion is clear. Step 3: Add sausage to vegetables and cook for 1 to 2 minutes, or until it is reheated. Step 4: Add your eggs and cook until eggs are completely done.

Putting it all together

Step 1: Using an oven-safe pan, coat the bottom with non-stick spray. Step 2: Add tots til you have an even layer on the bottom of pan. Step 3: Next take your egg, sausage and vegetable mix and place on top of tots, keeping it even. Step 4: Cover with a layer of shredded cheese. Step 5: Place in oven at 350 for about 15 minutes, or until cheese is melted. Step 6: Let cool for a minute or two, then plate and serve.
