Chicago Style Deep Dish Pizza at Home
We love pizza in our house and deep dish is a family favorite! This recipe was inspired by Emeril Lagasse with a few changes of my own. I hope you enjoy it as much as my family does!

Deep dish pizza dough
* 1 1/2 cups warm water *1 (1/4 oz pack) Active dry yeast *1 teaspoon sugar *1/2 cup vegetable oil *1 teaspoon salt *4 cups all-purpose flour
Step 1: In a large bowl, combine the water, yeast, and sugar and stir to combine. Let sit until the mixture is foamy, about 5 minutes. Step 2: Add 1/2 of the flour, the oil, sugar and the salt, mixing with a spatula until it is all mixed well. Step 3: Add rest of the flour, until all the flour is incorporated but the dough is still slightly sticky. Step 4: Use hands to knead rest of flour into a dough ball. Step 5: Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours.
Pizza Sauce
*1 tablespoon garlic(chopped, can use garlic powder if you do not have the other) *2 tablespoons olive oil *2 teaspoons basil *1 teaspoon oregano *1/4 teaspoon fennel seeds *1/2 teaspoon salt *1/4 teaspoon black pepper *1/4 teaspoon red pepper *1 28oz. can crushed peeled tomatoes *1 tablespoon red wine vinegar *1 teaspoon sugar
Step 1: While the dough is rising, make the tomato sauce. In a medium saucepan, heat the oil over medium-high heat. Add the garlic and cook, stirring, for 30 seconds. Step 2: Add the herbs, seeds, salt, and black and red peppers, and cook, stirring, for 30 seconds. Step 3: Add the tomatoes, wine and sugar, and bring to a boil. Step 4: Lower the heat and simmer, stirring occasionally, until thickened, 20 to 30 minutes. Step 5: Remove from the heat and let cool completely before using.
Preheat the oven to 475 degrees F.
Putting it all together
*One 14-inch deep dish pizza pan *1 pound mozzarella (can use up to 1 1/2 pounds) *1 16-inch pizza round *And the pizza toppings of your choice *2 tablespoons of olive oil
Step 1: Oil your 14-inch round deep-dish pizza pans with the olive oil. Step 2: Remove your dough ball from the bowl and knead for 1 min. to remove any large air bubbles. Step 3: Press your dough into pan, pressing to the edge. Step 4: Lift your dough and flip it over, placing it back into your pan and stretching up the sides of your pan. Step 5: Let rest for a minute. Step 6: Add the cheese and spread evenly on top of the dough, being careful not to cover the edges. Step 7: Add your toppings of choice, careful not to use to many. Step 8: Pour your cooled sauce over the pizza and use a spatula to cover any areas without sauce. Step 9: (Optional) Add 1/4 cup of parmesan sprinkled on top. Step 10: Bake until the top is golden and the cheese is bubbly and the crust is golden brown, about 30 minutes.
Remove from the oven, slice and serve hot.
