Loaded Potato with Buffalo Chicken Bake
This is a great meal for us when the little ones are gone! Just an FYI, if you can't handle spicy foods, be very careful with the hot sauce!

Needed to make
*8 to 10 cubed potatoes *1 1/2 teaspoon salt *2 cups of boiled, chopped chicken *1/2 Tablespoon pepper *2 Tablespoons garlic powder *1/3 cup olive oil *1 Tablespoon paprika *1 to 6 Tablespoons hot sauce *2 cups shredded cheese *1 cup crumbled, well cooked bacon *1 cup diced onion
Step 1: In a large bowl mix oil, salt, paprika, pepper, garlic and hot sauce, mixing well. Step 2: Slowly add potatoes and mix well until potatoes are well coated. Cover bowl with plastic wrap and let sit for 10 to 15 minutes. Step 3: Lightly spray a 9 x 13 oven safe dish with non-stick cooking spray. Carefully remove potatoes from your bowl to your cooking dish, leaving as much of your spices behind as you can. Step 4: Bake at 500 for about 45 minutes or until browned and potatoes are soft. Step 5: Add your chicken to the leftover sauce and stir well. Cover with plastic wrap and set aside for 10 to 15 minutes. Step 6: Once the potatoes are done, remove from oven and lower temperature to 400. Step 7: Take your chicken and spread it over the potatoes evenly. Now add your onion, cheese and bacon. Step 8: Place bake into oven for 10 to 15 minutes or until cheese is completely melted.
Allow to cool for about 5 minutes and serve.
