Chocolate Peanut Butter Cupcakes


This is one of my favorite cupcakes! The moist chocolate cupcake topped with soft, creamy peanut butter is a truly dreamy mix.

Needed to make the cupcakes:

*1 1/2 cup flour *2/3 cup cocoa powder *1 teaspoon baking soda *1/2 teaspoon salt *1 1/2 cup sugar *1/2 cup butter, softened *2 eggs *1 teaspoon vanilla *1 cup milk

Step 1: In a medium mixing bowl, add all dry ingredients and whisk lightly. Step 2: In a large bowl or mixer, add all your wet ingredients and mix well. Step 3: Add your dry ingredients to your wet a little at a time and mix well. Step 4: Once everything is well blended, add to your cupcake pan that is lined with papers. Makes between 20 and 22 cupcakes. Step 5: Bake at 350 for 18 to 20 minutes. Test with a toothpick to make sure they are done inside.

Remove from oven and allow to cool for 10 to 20 minutes.

Needed to make the peanut butter buttercream:

*3 cups of powdered sugar *1 1/2 teaspoon vanilla *1/4 cup of milk *1/3 cup peanut butter, creamy

Step 1: Add your milk, vailla and peanut butter to mixer. Mix on low til well blended. Step 2: Add your sugar one cup at a time and mix well. (If your mixture is too thick, add 1 Tablespoon of milk at a time. If to thin, add 1/4 cup more of sugar at a time.) Step 3: Move your buttercream to a piping bag with a tip of your choice and pipe onto your cooled cupcakes. Step 4: Optional: Top with mini semi-sweet chocolate chips.

Now serve.
