Chicken and Wild Rice Casserole

This is an easy dinner casserole that will feed 8 to 10 people.

Needed to make

*1/2 cup butter

*1/2 cup flour

*1 teaspoon salt

*1/4 teaspoon pepper

*1 1/2 cup chicken broth

*2 1/4 cup milk

*6 cups cooked wild rice (2 boxes of Uncle Ben's wild rice will work)

*3 cups of boiled and chopped chicken (about 3 breast worth)

*3- 4 oz. cans of sliced mushrooms, drained

*1 cup chopped bell pepper

*1/4 cup chopped pimento, drained

*1/3 cup sliced almonds

Step 1: In a large skillet, melt butter. Blend in salt, pepper and flour. Cook over low heat, stirring constantly, until smooth and bubbly.

Step 2: Add milk and chicken broth. Bring to a boil, stirring constantly. Boil for 1 minute.

Step 3: Add remaining ingredients and mix well.

Step 4: Using a 9 x 13 oven safe pan, lightly coat with non-stick cooking spray. Pour mixture into pan and bake at 350 for 30 to 45 minutes. Allow to cool for a few minutes.

Now serve.
