Enchilada's with Spanish Rice and Refried Beans


This is another of my grandmother's recipes and is a huge family favorite! Of course I don't make my rice or beans from scratch, but it's still comes out good!

********************

Needed to make the enchilada's:

*1 package of corn tortilla's (white or yellow)

*3 small cans enchilada sauce (or 2 large)

*1 med onion, diced (optional)

*1 6oz can tomato sauce

*1 teaspoon salt

*1 teaspoon pepper

*2 Tablespoons chili powder

*2 Tablespoons cumin

*1 lbs. ground beef

*1 lbs. shredded cheddar cheese

Step 1: Cook hamburger and drain grease.

Step 2: Add cumin, chili powder, salt, pepper and tomato sauce. Bring to a simmer. Cook for 1 minute and remove from heat.

Step 3: Pour the enchilada sauce in a large bowl.

Step 4: Dip each tortilla in the sauce and place in your oven safe dish. Add a spoonful of meat mixture, some onion and cheese. Roll up and slide to the side, with the edges facing down. Repeat this step until all are done, filling each dish.

Step 5: Add about 1 cup of cheese and some onion over the top and spread it evenly.

Step 6: Pour about 1 1/2 to 2 cups of the sauce on top and cook at 350 for 15 mintues or until cheese is melted.

Needed to make the Spanish Rice:

*1 package of Spanish rice

*1/2 a can of Rotel (without juice)

*about 1/2 a cup of the enchilada sauce

Step 1: Make per box instructions, but add the sauce and Rotel at the same time as rice.

Step 2: Allow to cool for a few minutes before serving.

Needed to make the Refried Beans:

*1 can of refried beans

*about 1/2 a cup of the enchilada sauce

*1/2 a can of Rotel (with 2 to 3 Tablespoons of the juice)

*1/2 teaspoon cumin (can cut in half)

*1/2 teaspoon chili powder (can cut in half)

Step 1: Add everything to a skillet and mix well. Allow to simmer for about 5 minutes on low, stirring as needed.

Step 2: Allow to cool a minute before serving.

Optional: You can sprinkle onion and cheese on top, cover with a lid after turning off the heat for a minute or two to allow the cheese to melt.
