Candied Sweet Potatoes

This is another of my grandmother's recipes that we had every thanksgiving when I was growing up. I still make it every year. It is a great side.

*******************

Needed to make

* 3 or 4 medium size sweet potatoes

* 2 tbsp. pineapple juice

* 1 cup brown sugar ( I use light)

* 1/2 cup butter

* 1 to 2 cups miniature marshmallows

Step 1: Boil potatoes until done. Peel and cut off root ends.

Step 2: Put in medium size baking dish and mash. Do not mash all the way, leave with chunks still in it.

Step 3: In a small pan, add sugar, butter and juice. Bring to a boil and pour over potatoes.

Step 4: Cover the top with marshmallows and bake at 350 until brown on top. About 10 to 15 minutes.
