Chocolate Pecan Cookies


These are great for when you just want something different!

FYI: I somehow did not have the camera on when getting the chocolate ready and added to the cookies. Please see the directions below and I'm sorry for the mistake.

Needed to make

* 1/2 cup plus 1 Tablespoon butter, softened

* 1/4 cup packed brown sugar

* 1 egg yolk

* 1 egg white, lightly beaten

* 1 teaspoon vanilla extract

* 1 cup flour

* 3/4 cup finely chopped pecans (or nut topping)

* 3/4 cup semisweet chocolate chips

Step 1: In a mixing bowl, cream the butter and sugar. Beat in the egg yolk and vanilla. Gradually add the flour, mix well. Cover and refrigerate for about 2 hours.

Step 2: Roll dough into 1-inch balls. Dip in egg white, then coat with the pecans. Place on a greased cookie sheet about 2 inches apart.

Step 3: Using the pad of your thumb, make a 1/2 inch indentation in the center of each ball. Bake at 325 for 10 minutes. Using a spoon, press each indentation down again and bake for another 10-15 minutes or until pecans are golden brown. Remove to a wire rack to cool.

Step 4: Using a microwave safe bowl, heat the chocolate and remaining butter until melted, stir until well blended. Spoon into each cookie.
